Kimchi Mushroom Fried Rice

Two weeks post surgery, ten days back home and finally eating like a normal person except now my doctor has put a heap of food restrictions on me. No gluten, no dairy, no soy, no caffeine, no alcohol and no red meat. I’m not going to lie, as a scotch and steak girl, the last two were the hardest to bear but health comes first and life goes on.

Having lived alone for most of my life and being an introvert, it’s always difficult having people in my personal space but I’ve gotten used to my mother living with me and taking care of me. With all the things I can’t eat, she’s been busy in the kitchen trying to make food that actually tastes good within the restrictions.

Umma’s kimchi mushroom fried rice is best served and eaten straight from the frying pan with just a smidgen of sesame oil for flavour and the best way to kick start a new year of healthy eating. Most likely than not, there will be less posts about food and more posts about the ridiculous amount of money I’ve been spending on clothes since I can’t eat out as much haha.

Umma’s Kimchi Mushroom Fried Rice (as per her instructions)
Handful of kimchi (something grams)
One King Oyster Mushroom (chopped)
Bowl of cold white rice
Sesame oil

First fry the mushroom in the frying pan, then put kimchi and then cold rice not hot rice and then make sure the rice is cooked properly and well blended with kimchi. Simple. And then afterwards two drops of sesame oil. All you need is kimchi. The more sour the better. 끝.

Easy as kimchi fried rice. Obviously not a whole bunch of finesse or science to it.
